1. 6 cups of mixed, organic greens
2. 2 apricots, pitted and sliced thin
3. 1 pear, cored and sliced thin
4. 1 cup pomegranate seeds
5. 1/2 a fennel bulb, trimmed and shaved
1. In a large bowl combine the greens. Gently stir in the rest of the ingredients leaving out a small portion to decorate the top. This will make the presentation Instagramable.
1. 2 tablespoons Dijion mustard
2. 3 tablespoons Champagne vinegar
3. 4 tablespoons balsamic vinegar
4. 3 cloves of garlic, minced
5. 1 shallot, minced
6. 1 cup of olive oil
1. In a medium bowl, blend all ingredients except the olive oil. After mixing, drizzle in the olive oil whisking it until it is throughly combined.
